Summer Salsa with Avocado

Serve this healthy, fresh veggie salsa cold and after a few hours of chilling in the fridge to let it marinate.

Combine:

2 cans of black beans- drained and rinsed very well
2 cans of sweet yellow corn- drained lightly
1 large red onion diced
2 ripe avocado diced
Juice of one lime
Salt and Pepper to taste

Serve this delicious summer recipe with a basket of tortilla chips! YUM!



Italian Margaritas for Summer

An Italian Margarita is one made with Amaretto.  Not your traditional Margarita, but it is a must have cocktail for the summer. This recipe is a classic Margarita, on the sour side, with the Amaretto added for the perfect balance. It has taken lots of practice...hahaha...to get this drink just right but we've mastered the recipe and it comes out perfect every time. Use this recipe as your guide and make it your own. This summer we began making large pitchers of it over ice and bringing it to BBQs. We leave the party with an empty pitcher or two each time. Italian Margaritas are a BIG hit!      Italian Margarita


Over a drinking glass filled to the top with ice:

Add 1 shot of fresh squeezed Key Lime Juice
Add 1 shot of Tequila
Add 1 shot of Amaretto
Add 1/2 shot of Triple Sec
Add 1 shot of Filtered Water (optional depending on how strong you want your cocktail)
Stir well and enjoy!

Rim your glass with Salt or Sugar or leave without. Follow measurements and multiply recipe for a large pitcher. The ice will melt to dilute the margarita if it is too strong for you but make it exact to start. You cannot beat the flavor of a GOOD Margarita from scratch. NEVER use a Margarita mix. Its full of sugar and artificial flavors.
